Salmon Fillet With Shallots And Tomato

Ingredients

  • Servings: 2
  • 2 salmon fillets, skinless, boneless
  • 2 tablespoons butter, softened
  • salt, to taste
  • fresh ground pepper, to taste
  • 2 tablespoons shallots, finely minced
  • 1/2 cup tomato, finely diced
  • fresh flat leaf parsley, to taste

Recipe

  • 1 preheat oven to 425 degrees f.
  • 2 tear off a large sheet of foil for each salmon fillet.
  • 3 grease foil with butter and place fish on foil.
  • 4 season fish with salt and pepper.
  • 5 mix shallots and diced tomatoes together and spread evenly on fish.
  • 6 scatter parsley leaves on top.
  • 7 fold foil around fish and set foil packet on a cookie sheet,.
  • 8 bake 8-10 minutes.
