Peachy Lamb Picante

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 1 lb boneless lamb, cut into 3/4-inch cubes
  • 1 tablespoon taco seasoning
  • 1 teaspoon vegetable oil
  • 1 cup chunky salsa
  • 1/3 cup peach preserves or 1/3 cup sugar-free peach preserves

Recipe

  • 1 coat lamb cubes with taco seasoning.
  • 2 heat oil in a heavy nonstick skillet over medium high heat and saute lamb 2-3 minutes, stirring occasionally until browned on all sides.
  • 3 add salsa and preserves. reduce heat to low, cover and simmer 15-20 minutes.
  • 4 serve with a nice rice dish, green vegetable and pinot blanc wine.
  • 5 enjoy!
