Ingredients

- 1 lb boneless lamb, cut into 3/4-inch cubes
- 1 tablespoon taco seasoning
- 1 teaspoon vegetable oil
- 1 cup chunky salsa
- 1/3 cup peach preserves or 1/3 cup sugar-free peach preserves
Recipe
- 1 coat lamb cubes with taco seasoning.
- 2 heat oil in a heavy nonstick skillet over medium high heat and saute lamb 2-3 minutes, stirring occasionally until browned on all sides.
- 3 add salsa and preserves. reduce heat to low, cover and simmer 15-20 minutes.
- 4 serve with a nice rice dish, green vegetable and pinot blanc wine.
- 5 enjoy!
