Diabetic Eggnog

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 8
  • 2 eggs, beaten
  • 1/4 cup splenda sugar substitute
  • 1 (13 ounce) can evaporated milk
  • 2 cups 2% low-fat milk
  • 1 teaspoon vanilla
  • 1 teaspoon rum flavoring
  • ground nutmeg
  • 2 cups 2% low-fat milk

Recipe

  • 1 mix 2 cups 2% milk with splenda in pan.
  • 2 boil for 1 minute,stirring constantly.
  • 3 remove from heat.
  • 4 mix 1/2 of the milk with the eggs,and add back to the pan.
  • 5 cook over low heat,stirring constantly,until slightly thickened.
  • 6 remove from heat.
  • 7 stir in vanilla and rum flavorings.
  • 8 cool to room temperature,then refrigerate til chilled.
  • 9 stir 2 cups 2% milk into chilled mixture.
  • 10 sprinkle with nutmeg.
  • 11 serve in 4 oz. glasses.
