Diabetic Eggnog

Ingredients

- 2 eggs, beaten
- 1/4 cup splenda sugar substitute
- 1 (13 ounce) can evaporated milk
- 2 cups 2% low-fat milk
- 1 teaspoon vanilla
- 1 teaspoon rum flavoring
- ground nutmeg
- 2 cups 2% low-fat milk
Recipe
- 1 mix 2 cups 2% milk with splenda in pan.
- 2 boil for 1 minute,stirring constantly.
- 3 remove from heat.
- 4 mix 1/2 of the milk with the eggs,and add back to the pan.
- 5 cook over low heat,stirring constantly,until slightly thickened.
- 6 remove from heat.
- 7 stir in vanilla and rum flavorings.
- 8 cool to room temperature,then refrigerate til chilled.
- 9 stir 2 cups 2% milk into chilled mixture.
- 10 sprinkle with nutmeg.
- 11 serve in 4 oz. glasses.
