Diabetic Thumbprint Cookies

Total Time: 19 mins Preparation Time: 4 mins Cook Time: 15 mins

Ingredients

  • 1/2 cup butter or 1/2 cup margarine, softened
  • 1 egg
  • 1/2 teaspoon vanilla
  • 1 1/4-1 3/8 cups flour
  • 1/2 cup chopped nuts
  • 3 teaspoons artificial sweetener
  • 2 tablespoons diabetic sugar-free jam or 2 tablespoons sugar-free jelly

Recipe

  • 1 beat together butter, egg, vanilla, and enough flour so dough is no longer sticky.
  • 2 work in nuts.
  • 3 chill until firm enough to shape and roll into balls.
  • 4 place on ungreased cookie sheet.
  • 5 dip thumb in flour.
  • 6 press firmly in middle of each cookie.
  • 7 bake 15 mins or til golden brown on the bottom (350f).
  • 8 remove from oven.
  • 9 sprinkle with artificial sweetener.
  • 10 allow to cool.
  • 11 fill hollows with jam or jelly.
  • 12 keep refrigerated.
