Mincemeat Pie (diabetic)

Total Time: 45 mins Preparation Time: 20 mins Cook Time: 25 mins

Ingredients

  • Servings: 8
  • 1 (9 inch) unbaked pie shells
  • 1/2 lb beef stew meat
  • 2 medium apples
  • 1 orange, with rind
  • 1/2 lemon, with rind
  • 1/4 lb suet
  • 1/2 cup raisins
  • 1/2 cup currants
  • 3 tablespoons sugar substitute
  • 1/2 cup orange juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 1 dash cinnamon
  • 1 dash mace (optional)

Recipe

  • 1 prepare but do not bake pie shell.
  • 2 place stew meat in covered saucepan and cover with water.
  • 3 place on medium heat and cook about 1 hour or til very tender.
  • 4 drain thoroughly.
  • 5 core apples and slice.
  • 6 cut orange and lemon (including rind) into small pieces.
  • 7 combine beef, suet, orange and lemon pieces in food processor, chopping into coarse meal consistency.
  • 8 pour back into saucepan.
  • 9 add remaining ingredients.
  • 10 cover and simmer on low for one hour.
  • 11 pour into unbaked pie shell.
  • 12 bake 400°f 25 minutes.
