Poached Salmon With Caper Sauce

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 4 salmon steaks or 4 other fish steaks
  • 1 cup chicken broth
  • 1/4 cup dry wine
  • 1 dash pepper
  • 4 slices lemons
  • 2 tablespoons water
  • 2 teaspoons cornstarch
  • 2 teaspoons drained capers

Recipe

  • 1 rinse fish and pat dry with paper towels.
  • 2 in a 10-inch skillet combine chicken broth, wine, and pepper.
  • 3 bring to boiling; reduce heat.
  • 4 place fish in skillet; place lemon slices atop fish.
  • 5 cover and simmer for 8 to 12 minutes or until fish flakes easily when tested with a fork.
  • 6 remove fish and lemon; keep fish warm.
  • 7 discard lemon.
  • 8 gently boil broth mixture, uncovered, until reduced to 3/4 cup (about 2 minutes).
  • 9 stir together water and cornstarch; stir into broth mixture.
  • 10 stir in capers.
  • 11 cook and stir until thickened and bubbly.
  • 12 cook and stir 1 minute more.
  • 13 spoon sauce over fish and serve.
