Lamb Chops Creole

Total Time: 30 mins Preparation Time: 5 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 4 lamb chops
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 slices onions, thin
  • 4 green pepper rings
  • 4 tablespoons uncooked rice
  • 1 (8 ounce) can stewed tomatoes

Recipe

  • 1 in large skillet, over medium heat, brown lamb chops.
  • 2 sprinkle salt and pepper on the lamb chops.
  • 3 top each chop with 1 onion slice and 1 green pepper ring.
  • 4 remove from pan.
  • 5 drain all grease from pan.
  • 6 in skillet, put rice and stewed tomatoes and stir well; lay chops on top of the tomatoes and rice.
  • 7 cover and simmer until rice is done, add small amounts of water if needed.
