Lentil And Yogurt Salad

Ingredients
- Servings: 8
- 1 cup dry lentils, rinsed (i used green)
- 6 cups water
- 2 cups nonfat yogurt (original has 6 cups!)
- 1/4 cup fresh cilantro, chopped
- 2 garlic cloves, minced
- 1 teaspoon dried thyme
- 1 pinch cayenne
- salt and pepper, to taste
Recipe
- 1 place lentils and water in a saucepan and bring to a boil.
- 2 the following is for green lentils, other kinds of lentils take less time to cook. so check your package directions. cover and cook over medium heat for 25-30 minutes or until lentils are tender but not mushy.
- 3 drain and allow to cool.
- 4 place cooled lentils in a mixing bowl and stir in the rest of the ingredients.
- 5 suggested to serve immediately but i think it's better after sitting.
