Mexican Quinoa Salad

Ingredients

  • 2 cups quinoa, cooked
  • 2 tomatoes, diced
  • 2 onions, diced
  • 2 bunches fresh cilantro, chopped
  • 1 cucumber, seeds removed and diced
  • 1/4 cup fresh lemon juice
  • 2 jalapenos, seeds removed and diced
  • salt and pepper

Recipe

  • 1 combine all ingredients in bowl and mix. you can adjust the vegetables to you liking.
