Diabetic Carrot Cake

Total Time: 45 mins Preparation Time: 10 mins Cook Time: 35 mins

Ingredients

  • Servings: 16
  • 2 cups flour
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 3 eggs
  • 1/4 cup mayonnaise
  • 2 cups carrots, grated
  • 1 (8 ounce) can crushed unsweetened pineapple (undrained)
  • 1 teaspoon vanilla
  • 1/2 cup walnuts, chopped
  • 1 cup raisins
  • 1 cup whipping cream
  • 1 teaspoon vanilla
  • 8 teaspoons artificial sweetener

Recipe

  • 1 in a large bowl, combine flour, baking soda, cinnamon, ginger and salt. in another bowl beat eggs, mayonnaise.
  • 2 gradually beat in flour mixture.
  • 3 stir in remaining ingredients.
  • 4 pour into a grease, floured 8 inch square cake pan.
  • 5 bake 30 to 35 minutes. 350°f.
  • 6 cool 10 minutes.
  • 7 remove from pan.
  • 8 cool completely.
  • 9 prepare topping by beating whipped cream til thick. add vanilla and sweetener. spread over cake.
