Diabetic Carrot Cake

Ingredients

- 2 cups flour
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- 1/2 teaspoon ground ginger
- 1/2 teaspoon salt
- 3 eggs
- 1/4 cup mayonnaise
- 2 cups carrots, grated
- 1 (8 ounce) can crushed unsweetened pineapple (undrained)
- 1 teaspoon vanilla
- 1/2 cup walnuts, chopped
- 1 cup raisins
- 1 cup whipping cream
- 1 teaspoon vanilla
- 8 teaspoons artificial sweetener
Recipe
- 1 in a large bowl, combine flour, baking soda, cinnamon, ginger and salt. in another bowl beat eggs, mayonnaise.
- 2 gradually beat in flour mixture.
- 3 stir in remaining ingredients.
- 4 pour into a grease, floured 8 inch square cake pan.
- 5 bake 30 to 35 minutes. 350°f.
- 6 cool 10 minutes.
- 7 remove from pan.
- 8 cool completely.
- 9 prepare topping by beating whipped cream til thick. add vanilla and sweetener. spread over cake.
