Diabetic Ginger Peach Parfait

Total Time: 1 hr 3 mins Preparation Time: 3 mins Cook Time: 1 hr

Ingredients

  • Servings: 4
  • 1 (10 g) box jello sugar-free peach gelatin mix
  • 1 cup boiling water
  • 1 cup diet ginger ale
  • 2 -3 cups non-fat vanilla yogurt, divided
  • cool whip lite (optional)

Recipe

  • 1 dissolve jello in the boiling water and allow to cool to lukewarm.
  • 2 add the ginger ale cold from the fridge.
  • 3 mix and chill to a thick syrup consistency.
  • 4 then, using a whip, mix in 1 to 2 cups of yogurt, 1 cup will give you a firmer finished dessert and the more you add the softer it will be.
  • 5 chill until almost set but still workable.
  • 6 spoon into 4 glasses until about 2/3 full.
  • 7 spoon in a layer of vanilla yogurt, 1/4 cup(or less depending on the size of the glass) per glass.
  • 8 fill remaining room in glass with the jello mix.
  • 9 chill.
  • 10 at serving, top with the cool whip lite if using.
  • 11 a sprinkle of cinnamon may be added if desired.
