Diabetic, Low-fat Mustard Sauce

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 8
  • 2 egg yolks
  • 3 tablespoons vinegar
  • 1 tablespoon prepared mustard
  • artificial sweetener, to equal 1 tsp. sugar
  • 1/2 teaspoon dry mustard
  • 3 tablespoons skim milk
  • 1 tablespoon lemon juice

Recipe

  • 1 beat egg yolks with dry mustard in the top of a double boiler until blended.
  • 2 add vinegar gradually, beating after each addition.
  • 3 cook over simmering water, stirring constantly until thick and smooth.
  • 4 add milk gradually, beating in with a fork or wire whip.
  • 5 cook 5 more minutes over simmering water.
  • 6 remove from heat.
  • 7 let cool 10 minutes.
  • 8 add remaining ingredients, blend well.
