Diabetic Roasted Tomatoes

Total Time: 35 mins Preparation Time: 5 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 4 large plum tomatoes, trimmed and halved lengthwise (1 lb)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Recipe

  • 1 put oven rack in middle position and preheat oven to 375°f.
  • 2 arrange tomatoes, cut sides up, in 1 layer in an 8- to 9-inch glass baking dish and sprinkle with salt and pepper.
  • 3 roast until skins are wrinkled and beginning to brown, about 30 minutes. keep warm, covered with foil, until ready to serve.
