Diabetic Waldorf Salad

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 4 teaspoons light mayonnaise
  • 3 small red apples, chopped
  • 1/4 cup walnuts, chopped
  • 2 teaspoons unsweetened pineapple juice
  • 1/2 cup celery, diced

Recipe

  • 1 mix mayonnaise and juice.
  • 2 mix apples with celery and walnuts.
  • 3 fold in dressing and mix well.
  • 4 chill for 30 minutes before serving.
