Grilled Venison Steak

Ingredients
- Servings: 6
- 1 1/2 cups vinegar
- 1 cup red wine
- 1/4 cup cooking oil
- 1 bay leaf
- 1/4 teaspoon thyme
- 5 peppercorns
- 1 medium onion, finely chopped
- 2 tablespoons chopped celery
- 1/4 teaspoon whole allspice
- 1/2 teaspoon salt
- 1 medium carrot, finely chopped
- 6 venison steak
- salt and pepper
Recipe
- 1 for the marinade: combine all ingredients in a saucepan.
- 2 heat mixture to boiling over high heat; reduce heat to low and simmer, covered, for about 30 minutes.
- 3 set aside to cool completely.
- 4 cover and store in refrigerator until ready to use.
- 5 marinate game in refrigerator before bbq'ing.
- 6 to cook venison, place on a lightly greased, preheated bbq grill and broil 7 to 10 minutes per side.
- 7 season to taste and serve.
