Chicken In Mead Sauce

Total Time: 1 hr 20 mins Preparation Time: 10 mins Cook Time: 1 hr 10 mins

Ingredients

  • 4 chicken legs-thighs (wings and/or thighs)
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 small onion, chopped
  • 4 ounces mushrooms
  • fresh parsley, finely chopped
  • 1 teaspoon lemon juice
  • 5 ounces mead (you may have to do some hunting for it)
  • salt
  • black pepper

Recipe

  • 1 preheat the oven to 190c/375f/gas 5.
  • 2 fry the chicken joints in the oil and butter until browned.
  • 3 put them aside in a casserole dish.
  • 4 make a sauce by adding the chopped onion to the oil and butter in the pan and fry for 2-3 minutes.
  • 5 add the mushrooms, parsley, lemon juice, mead and seasonings.
  • 6 stir well and cook for a further 3 minutes before pouring the sauce over the chicken joints.
  • 7 cover and cook in the oven for about 1 hour.
