Chicken In Mead Sauce

Ingredients
- 4 chicken legs-thighs (wings and/or thighs)
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1 small onion, chopped
- 4 ounces mushrooms
- fresh parsley, finely chopped
- 1 teaspoon lemon juice
- 5 ounces mead (you may have to do some hunting for it)
- salt
- black pepper
Recipe
- 1 preheat the oven to 190c/375f/gas 5.
- 2 fry the chicken joints in the oil and butter until browned.
- 3 put them aside in a casserole dish.
- 4 make a sauce by adding the chopped onion to the oil and butter in the pan and fry for 2-3 minutes.
- 5 add the mushrooms, parsley, lemon juice, mead and seasonings.
- 6 stir well and cook for a further 3 minutes before pouring the sauce over the chicken joints.
- 7 cover and cook in the oven for about 1 hour.
