scrumptious sweet potato casserole

Ingredients

  • Servings: 8
  • 3 cups cooked and mashed sweet potatoes
  • 2/3 cup white sugar
  • 1/4 cup butter, softened
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 2 eggs, beaten
  • 1 cup packed light brown sugar
  • 1 cup chopped pecans
  • 1/2 cup all-purpose flour
  • 1/3 cup butter, softened

Recipe

  • preheat oven to 350 degrees f (175 degrees c). lightly grease a 9x13 inch baking dish.
  • in a large mixing bowl, combine sweet potatoes, white sugar, 1/4 cup margarine, vanilla, milk, and beaten eggs. mix well. pour mixture into prepared baking dish.
  • in a medium mixing bowl, combine brown sugar, chopped pecans, flour, and 1/4 cup margarine. mix well. sprinkle over sweet potato mixture.
  • bake for 25 to 30 minutes.
