  • 2 2/3 cups nonfat dry milk powder
  • 1 1/2 cups sugar (or stevia)
  • 1 cup water
  • 1 1/2 teaspoons vanilla

Recipe

  • 1 - microwave milk and water 1 minute until steaming.

  • 1 tablespoon olive oil
  • 1 1/2 cups halved and sliced onions

  • 2 cups vegetable broth

  • 1 dice onions, celery & chicken (dice chicken separately).

  • 600 g chicken, thai cut into bite pieces

Recipe

  • 1 have the cantaloupe and strawberries chilled and ready.
  • 2 cut the cantaloupe in half, remove seeds then peel, slice and chop (reserve the other half for another purpose).

  • 2 spray a large baking tray with non-stick cooking spray.

  • 1/2 cup warm water (may possibly need to add more, up to 3/4 cup) or 1/2 cup milk (may possibly need to add more, up to 3/4 cup)

Recipe

  • 1 sift the flour, salt & baking powder into a large mixing bowl.
  • 2 into the dry ingredients cut in the shortening, or add oil if you are using this option, & mix with your fingertips to combine.
  • 3 add the milk or water, working the liquid into the dough until a sticky ball forms.
  • 4 wrap in plastic and let rest for at least 30 minutes.
  • 5 divide the dough into 8-10 balls (for small tortillas) or 6-8 balls for larger ones, cover them again with the damp cloth.

  • 1 soak whole, dry chilies in water for 15 to 20 minutes. puree to a fine paste with little water.
  • 2 heat oil in a heavy bottom pan. once oil is hot, saute cardamom pods and cloves until fragrant. add bay leaves, onions and fry till brown.
  • 3 add chicken and salt. saute until chicken is nicely browned.
  • 4 add fennel, ginger powder and the prepared red chilli paste. saute for 1 to 2 minutes.
  • 5 add 1 cup of water. lower heat, cover and simmer for about 15 minutes or until the chicken turns tender and a thick gravy remains. right before serving, add garam masala and stir.
  • 6 serve hot over rice.

Ground Beef Roll With Stuffing

  • 800 g ground beef (2lbs minus 3 oz, but not important)
  • 1 small onion, finely chopped
  • 3 garlic cloves, finely chopped
  • 15 ml worcestershire sauce (1 tablespoon)
  • 2 ml ground cloves (about 1/3 teaspoon)
  • 100 ml dried breadcrumbs (about 1/3 cup)
  • 1 large egg
  • 2 teaspoons salt (or to taste)
  • 1 tablespoon dried thyme (or more if fresh)
  • extra seasoning, dried (to your taste, such as garlic-and-herb)
  • 50 -100 ml milk (about 1/4 - 1/3 cup, see directions)
  • 250 g bacon, streaky (8 oz, the rather fatty strips)
  • 6 -8 leaves swiss chard (the large green chard leaves)
  • 1 1/2 cups cheddar cheese, grated (or mozzarella or other cheese)

  • 1 oven: 325 - 350 deg f/ 160 - 180 deg c (fan-assisted ovens need lower heat).
  • 2 in a large pot boil some water. hold each swiss chard leaf by the stem, and dip into the boiling water to wilt -- about 1 - 2 seconds. repeat with all the leaves, and lay on kitchen paper to dry.
  • 3 put the ground beef in a bowl, and add all the ingredients, mixing in well with a fork, except the milk, bacon, chard leaves and cheese.
  • 4 when well mixed, add a little milk to obtain a soft but firm texture, firm enough to mold by hand. judge the quantity yourself.
  • 5 on a square of baking paper pat out the meat mixture to form a neat rectangle, slightly less than 1/2 inch thick -- about 1 cm thick.
  • 6 cut out the ribs of the chard leaves, and lay the leaves across the meat, folding them if necessary. you will have at least two layers. you can use more leaves if you like, so the green shows up more clearly when sliced.
  • 7 season very lightly with a seasoning salt, and then strew over the grated cheese. use more if you like.
  • 8 using the baking paper roll up the meat carefully from the short end. you should have a neat, firm roll. cover the roll with the strips of streaky bacon (it does not go underneath). as you work, cover the open "seam" at the side by pressing the bacon strips over it, and tucking them in slightly.
  • 9 with your hands, carefully remove the roll to a suitable oven dish -- with sides, because fat will run out which you could drain off when the roll is done.
  • 10 oven temperature depends on your oven: i prefer the far-assisted (convection) setting on my oven, which is very hot (or so it seems). so i bake this roll at 160 deg celsius bake for about 1 - 1 1/4 hours, until the bacon is golden brown.
  • 11 drain off fat. the roll should wait a little before you slice it, but keep warm. serve with side veggies and salad, and gravy if you like.

  • 1 preheat oven to 350°f (175°c); lightly oil a 9x9 inch square baking pan.
  • 2 heat 3 tablespoons olive oil in a large skillet over medium heat. saute onion, green onions and garlic, until soft and lightly browned. stir in spinach and parsley, and continue to saute until spinach is limp, about 2 minutes. remove from heat and set aside to cool.
  • 3 in a medium bowl, mix together eggs, ricotta, and feta. stir in spinach mixture. lay 1 sheet of phyllo dough in prepared baking pan, and brush lightly with olive oil. lay another sheet of phyllo dough on top, brush with olive oil, and repeat process with two more sheets of phyllo. the sheets will overlap the pan.
  • 4 spread spinach and cheese mixture into pan and fold overhanging dough over filling. brush with oil, then layer remaining 4 sheets of phyllo dough, brushing each with oil. tuck overhanging dough into pan to seal filling.
  • 5 bake in preheated oven for 30 to 40 minutes, until golden brown. cut into squares and serve while hot.

Outta This World Sausage Pasta Soup

Total Time: 42 mins Preparation Time: 20 mins Cook Time: 22 mins

Ingredients

  • 1 1/2 lbs italian turkey sausage
  • 1 medium green pepper, chopped
  • 1/2 cup chopped onion
  • 1 clove garlic, minced
  • 6 -8 cups water
  • 28 ounces diced tomatoes, undrained
  • 1 tablespoon sugar
  • 1 tablespoon worcestershire sauce
  • 2 teaspoons chicken bouillon granules
  • 1 teaspoon salt
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • 2 1/2 cups uncooked bow tie pasta

Recipe

  • 1 remove sausage casings& cut (or tear) into 1/2" pieces.
  • 2 in large kettle, cook sausage over medium heat for 5-7 minutes, or until no longer pink.
  • 3 remove sausage w/ a slotted spoon.
  • 4 drain, reserving 2 t.
  • 5 drippings.
  • 6 saute pepper, onion& garlic 4-5 minutes (in the drippings) or until tender.
  • 7 add the water, tomatoes, sugar, worcestershire, bouillon, salt, basil, thyme& sausage.
  • 8 bring to a boil, then add pasta.
  • 9 reduce the heat& simmer uncovered 18-22 minutes, or until pasta is tender.

Chicken And Pineapple

  • 4 chicken breasts
  • 1 teaspoon oil or 1 teaspoon butter

  • 12 -16 snow peas
  • 3 green onions (optional)

Recipe

  • 1 melt butter or oil in fry pan.
  • 2 brown chicken breasts and remove to plate.
  • 3 deglaze pan with chicken broth.
  • 4 add vinegar, sugar, cajun spice and pepper.
  • 5 simmer on medium heat for a minute or two.
  • 6 drain pineapple and reserve tidbits.
  • 7 set aside.
  • 8 put cornstarch in pineapple juice and stir.
  • 9 add to fry pan to thicken chicken broth.
  • 10 stirring often.
  • 11 at this point put chicken back in pan,cover and simmer for 10 minutes.
  • 12 turn chicken and add celery.
  • 13 stir.
  • 14 simmer another 5 minutes and add peppers and snow peas.
  • 15 stir.
  • 16 simmer another 5 minutes till vegetables are tender crisp.
  • 17 stir in reserved pineapple.

Low Fat Fava Beans With Parsley And Feta

  • 4 pillsbury unbaked pie shells (usually sold 2 per box)

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 take pie shells out of boxes to thaw.
  • 3 meanwhile,spray a large skillet with butter flavoured cooking spray, brown the meat and onion.
  • 4 stir in the cabbage.
  • 5 add tomato sauce, brown sugar twin,parsley, and black pepper.
  • 6 lower heat and simmer 15 minutes.
  • 7 put half of mixture into one of the pie shells and wet the top edge of the shell.
  • 8 pick up a second shell,invert the tray while putting your hand underneath touching the pastry to support the shell as it comes away from the tray.

  • 1 have the butcher crack the meat bones in several places.

  • 5 drain, reserving broth.
  • 6 remove all meat from bones and reserve.
  • 7 return all the picked over particles and bones back to the broth; simmer until broth is reduced to one quart.

  • 10 when the meat is nearly cold, cut into small dice.

  • 1 preheat oven to 350 degrees f.
  • 2 stir salt, lemon juice, turmeric, pepper, cloves, cinnamon, and saffron into the onion mush. mix onions, peas and meat. after meat has absorbed the onion mixture, add one raw egg and mix until well combined.

Recipe

  • 1 briefly steam fresh spinach approx 5 min, until wilted & tender. cook quinoa in seperate saucepan until liquid absorbed, approx 10-15 minute saute garlic and onion in small pan with butter or olive oil until onion is clear & tender.
  • 2 in vita mix or blender, puree carrots & celery. add tender onion & garlic and spinach. puree all together. add cooked quinoa and process on high until quinoa is liquified. may need to use a small amount of the chicken stock in vita mix or blender.
  • 3 in large soup pot combine remaining chicken stock and spinach, vegetable & onion puree, and quinoa puree. heat until warm.
