raspberry cup cakes

Ingredients

  • Servings: 12
  • 3/4 cup graham cracker crumbs
  • 1/4 cup chopped pecans
  • 3 tablespoons butter, melted
  • 3/4 cup fresh raspberries, crushed
  • 1/2 (8 ounce) package cream cheese
  • 10 1/2 fluid ounces sweetened condensed milk
  • 1 cup frozen whipped topping, thawed

Recipe

    Preparation Time: 15 mins Ready Time: 5 hrs 15 mins

  • line a 12 cup muffin pan with paper cup liners. in a medium bowl, combine graham cracker crumbs, crushed pecans and melted margarine, mixing well to blend. spoon mixture evenly into a 12 cup muffin pan lined with paper cup liners. press mixture with a spoon to firm bottom. puree raspberries and set aside.
  • beat cream cheese until fluffy. add condensed milk and 1/2 cup of the raspberry puree and mix until well blended. fold in whipped topping.
  • spoon evenly into baking cups. freeze for at least 5 hours. when ready to serve, remove paper liners. invert cakes individual serving plates. drizzle remaining raspberry puree over cakes. garnish with a few whole raspberries. serve frozen.

Krissy's Best Ever Corn Muffins

Ingredients

  • Servings: 12
  • 1/2 cup butter, softened
  • 2/3 cup white sugar
  • 1/4 cup honey
  • 2 eggs
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 3/4 cup yellow cornmeal
  • 1/2 teaspoon baking powder
  • 1/2 cup milk
  • 3/4 cup frozen corn kernels, thawed

  • preheat oven to 400 degrees f (200 degrees c). lightly grease a 12 cup muffin pan.

  • 1 1/2 cups white sugar

  • 1/3 cup unsweetened cocoa powder
  • 1 1/2 cups water

  • 1 1/2 teaspoons vanilla extract

  • preheat oven to 350 degrees (175 degrees c). lightly grease two 9 inch layer pans.

  • 2 cups warm water

old fashioned chicken and dumplings

Ingredients

  • Servings: 20
  • 7 pounds cut up chicken pieces
  • 4 cups chicken stock
  • 2 onions, chopped
  • 3 stalks celery, chopped
  • 3 teaspoons salt
  • 1 egg
  • 1/4 cup milk
  • 1 1/2 cups all-purpose flour, divided
  • 1 1/2 teaspoons baking powder
  • 2 tablespoons unsalted butter
  • 2 tablespoons chopped fresh parsley
  • 1 cup water
  • 1/2 teaspoon ground black pepper

Recipe

  • in a large pot place chicken pieces and add the chicken stock, onion, celery and 2 teaspoons of the salt. put heat on medium low and simmer, partially covered, 15 to 20 minutes or until chicken is tender.
  • to prepare dumplings: in a large mixing bowl beat together the egg and milk. add 1 cup flour, remaining salt and baking powder and mix all together. cut the butter into the flour mixture until the mixture is crumbly. add 1 tablespoon of the parsley and mix. in 6 large spoonfuls, drop dumpling mixture the top of the simmering chicken. cover the pot and let all simmer for 10 minutes more.
  • to make gravy: remove chicken and dumplings to a large serving bowl. cover and set aside, keeping warm. strain the stock left in the pot, pressing out any 'veggie liquid'. return stock to pot. combine water with remaining flour, then stir into the strained stock. bring all to a boil, stirring constantly, to thicken. return chicken and dumplings to pot, combing all gently. serve with remaining parsley.

Bacon Cheese Treats

Ingredients

  • 1 (8 ounce) package cream cheese, softened
  • 1 (12 ounce) jar bacon bits
  • 1 pinch ground black pepper, or to taste
  • 1/4 cup diced onion
  • 2 (8 ounce) packages refrigerated crescent roll dough

  • preheat oven to 350 degrees f (175 degrees c).
  • in a mixing bowl, combine the cream cheese, bacon bits, pepper and onion.
  • on a lightly floured surface, unroll the crescent rolls lengthwise and form into a long rectangle. thinly spread the cream cheese mixture on the dough. starting with the long edge of the rectangle, roll the dough into a long, thin roll. slice the roll into 1/4 inch thick pieces. place rolls on a lightly greased baking sheet.
  • bake in preheated oven for 15 minutes, or until brown.

Coconut Lime Rice

  • 1 cup basmati rice
  • 1 tablespoon coconut oil
  • 1 teaspoon butter
  • 1/4 cup flaked coconut
  • 1 cup coconut milk
  • 1 cup chicken broth
  • salt, to taste
  • 1 lime, zested and juiced
  • ground black pepper, to taste

  • rinse rice until the water runs clear; drain. heat coconut oil and butter in a large skillet over medium-high heat. cook and stir rice and coconut flakes for 3 to 4 minutes. stir in the lime juice, then add the coconut milk, chicken broth, salt and lime zest. bring to a low boil, then cover and reduce heat to low. cook for 20 minutes. remove from heat and keep covered for 5 minutes. fluff with fork and season with pepper.

Hash Brown Casserole I

Ingredients

  • 1 onion, chopped
  • 1 (2 pound) package frozen hash brown potatoes, thawed
  • 1 pint sour cream
  • 2 (10.75 ounce) cans condensed cream of celery soup
  • 1 cup shredded cheddar cheese
  • 1/4 teaspoon ground black pepper
  • 1 tablespoon hot pepper sauce
  • 3 tablespoons butter
  • 4 ounces buttery round crackers, crushed

Recipe

  • preheat oven to 350 degrees f (175 degrees c). grease one 8x12 inch baking dish.
  • over medium heat, cook the onion until soft.
  • in a large bowl, combine the onion, potatoes, sour cream, soup, cheese, pepper and hot sauce. mix well and pour into baking dish. bake for 50 minutes.
  • in a saute pan, heat butter or margarine and crackers. cook until golden brown. sprinkle over casserole and bake for 30 additional minutes.

Crepes

Ingredients

  • 1 cup all-purpose flour
  • 1 cup milk
  • 1 egg
  • 1 pinch salt

Recipe

  • in a medium-size mixing bowl, whisk together the flour, milk, egg and salt.
  • heat a large frying pan or wok over medium high heat. when the pan is hot add a teaspoon of butter and lightly coat the surface of the pan with the melted butter.
  • pour one quarter cup of the batter into the pan and tilt the pan with a circular motion so that the batter coats the surface in a smooth and even layer.
  • after two minutes, lift up an edge of the crepe with a spatula to see if it is browning. when the underside has begun to brown, flip the crepe and cook the other side until it is also brown; about 2 minutes.
  • repeat steps 3 and 4 to cook the remaining crepes. serve hot.

  • 6 tablespoons heavy cream
  • 1 teaspoon peppermint extract

  • line a 9x12 inch baking pan with aluminum foil or parchment paper.
  • melt half of the white chocolate in the top of a double boiler over just barely simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching. spread the white chocolate into the prepared pan. sprinkle 1/4 of the crushed peppermints evenly over white chocolate. chill until firm, about 15 minutes.
  • meanwhile, melt the dark chocolate, heavy cream, and peppermint extract together in the top of a double boiler over just barely simmering water, stirring frequently, until just melted. quickly pour the chocolate layer over the chilled white chocolate layer; spread evenly. chill until firm, about 20 minutes.

  • 3/4 teaspoon garlic powder, or to taste

  • 1 teaspoon ground dried turmeric
  • 1 teaspoon curry powder
  • 1 teaspoon ground cumin

chocolate-chocolate chip bacon cookies

Ingredients

  • 6 slices maple-cured bacon, chopped
  • 1 1/2 cups white sugar
  • 1 cup softened butter
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 2/3 cup cocoa powder
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 cups semi-sweet chocolate chunks

  • 1 cup orange juice
  • 1/2 cup heavy whipping cream
  • 2 eggs
  • 1 teaspoon ground cinnamon
  • 1/4 cup white sugar
  • 1 dash ground nutmeg
  • 3 tablespoons butter
  • 2 tablespoons confectioners' sugar for dusting

Coconut-curry Lentil Stew Served Over Quinoa

  • 1 small onion, chopped
  • 6 cloves garlic, minced
  • 5 large tomatoes, chopped

  • 1 (14 ounce) can coconut milk
  • 1 tablespoon molasses
  • 1/4 cup coconut powder
  • 1 (4 inch) cinnamon stick
  • 3 tablespoons curry powder
  • 2 tablespoons ground coriander
  • 2 cups red lentils

  • 1 bunch fresh cilantro, chopped

  • soak the quinoa in a bowl filled with cold water for 5 minutes, then drain using a fine mesh strainer, and rinse with running water. set the strainer aside so the quinoa can drain, then bring 3 1/2 cups of water and 1 tablespoon of salt to a boil in a saucepan. stir in the quinoa, cover, and reduce the heat to medium-low. simmer until the quinoa has absorbed the liquid and is tender, about 15 minutes. set aside, and keep warm.
