Diabetic Chai Tea

Total Time: 13 mins Preparation Time: 5 mins Cook Time: 8 mins

Ingredients

  • 2 cups water
  • 4 black tea, i prefer earl gray tea bags
  • 2 cups nonfat milk
  • 2 tablespoons splenda sugar substitute
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cinnamon

Recipe

  • 1 heat water to boiling. add tea bags; reduce heat and simmer for 2 to 4 minutes, depending on how strong you like your tea.
  • 2 remove tea bags and add spices. simmer for additional 2 minutes.
  • 3 add milk and splenda, heat to a near boil stirring constantly.
  • 4 serve and enjoy.

Diabetic Carrot-raisin Salad

Ingredients

  • Servings: 7
  • 2 cups carrots, grated
  • 1 cup unsweetened pineapple, crushed,drained
  • 1/2 cup raisins
  • 1 (8 ounce) carton plain low-fat yogurt

Recipe

  • 1 combine carrots, pineapple and raisins; mix well.
  • 2 chill for 2 to 3 hours.
  • 3 stir in yogurt and serve on lettuce leaf, if desired.
  • 4 serving may be exchanged for 1 fruit and 1 vegetable.

Basic Omelette

Ingredients

  • Servings: 1
  • 3 large eggs
  • 3 tablespoons milk
  • 1/4 teaspoon salt
  • 1 pinch black pepper
  • 1 tablespoon butter
  • 1/4 cup cheese (optional)
  • salsa (optional)

Recipe

  • 1 use a fork to beat together the eggs, milk, salt and pepper in a medium bowl until blended but not foamy.
  • 2 melt the butter over medium-high heat in a medium non-stick skillet.
  • 3 swirl the butter around in the pan until it stops foaming.
  • 4 pour in the eggs and reduce the heat to medium.
  • 5 as the mixture sets, lift the edges of the egg with a spatula and tilt the skillet so uncooked egg flows underneath. do not stir.
  • 6 continue cooking until the omelet is moist but not runny, about 3 minutes.
  • 7 if making a filled omelet, top it with your choice of filling.
  • 8 use a large spatula to loosen the edge of the omelet and fold it in half.
  • 9 slide it onto a plate, top with a few spoonfuls of salsa, if using, and serve.

Ingredients

  • 2 cups self-rising flour
  • 1 cup quick oats or 1 cup old fashioned oats
  • 1/4 cup splenda sugar substitute
  • 2 tablespoons splenda sugar substitute
  • 8 tablespoons butter, chilled and cut into pieces
  • 3/4 cup milk
  • 1 egg, lightly beaten
  • 1 teaspoon vanilla
  • 1/2 cup pecans, toasted and chopped
  • 2 teaspoons ground cinnamon
  • 3 -4 teaspoons orange juice or 3 -4 teaspoons milk
  • 3/4 cup splenda sugar substitute

Recipe

  • 1 heat oven to 425°f spray cookie sheet with cooking spray.
  • 2 in large bowl, combine flour, oats, 1/4 cup splenda; mix well.
  • 3 cut in butter with pastry blender or two knives until mixture resembles coarse crumbs.
  • 4 in small bowl, combine milk, egg and vanilla; blend well. add to dry ingredients all at once; stir with fork or rubber spatula until dry ingredients are moistened. in small bowl, combine remaining 2 tablespoons splenda with the pecans and cinnamon; mix well. sprinkle evenly over dough in bowl; gently stir batter to swirl in cinnamon mixture (do not blend completely.)
  • 5 drop dough by 1/4 cupfuls 2 inches apart on cookie sheet.
  • 6 bake 11 to 13 minutes or until golden brown. remove to wire rack; cool 5 minutes.
  • 7 glaze: in small bowl, combine splenda and enough liquid for desired consistency; mix until smooth. drizzle over top of warm scones. serve warm.

Diabetic Cinnamon Sour Cream Biscotti

Total Time: 1 hr 1 min Preparation Time: 18 mins Cook Time: 43 mins

Ingredients

  • Servings: 12
  • 1 1/2 cups unbleached flour
  • 1/2 cup splenda sugar substitute
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon cinnamon (more or less to taste)
  • 1/4 cup heart healthy margarine
  • 1/4 cup unsweetened applesauce
  • 1/2 teaspoon vanilla
  • 1/4 cup egg
  • 1/4 cup fat free sour cream

Recipe

  • 1 in one med bowl mix all of the dry ingredients together.
  • 2 in a small microwave safe bowl place the margarine and apple sauce.
  • 3 warm the small bolw on defrost till the margarine is soft enough to mix into the applesauce.
  • 4 add the vanilla, egg and sour cream to the small bowl with the margarine mixe and stir together.
  • 5 add the liquid ingredients to the flour mix and stir just till everything is mixed.
  • 6 turn onto a lightly floured surface and knead lightly about 4 times (don't over do it.
  • 7 transfer to pam sprayed baking sheet and shape into a log 10-12 inches long.
  • 8 bake at 350f for 25-30 mins (till browned lightly).
  • 9 remove fron oved and allow to sit for 15 minute.
  • 10 cut into 1/2 inch slices and return to the baking sheet cut side down.
  • 11 bake for 8 mins then turn the slices over and bake for another 8 minutes.
  • 12 remove from sheet and cool on a rack.

Cucumber-yogurt Crabmeat Salad

Ingredients

  • Servings: 4
  • 1 bell pepper, seeded and chopped
  • 3 green onions, chopped
  • 1 english cucumber, chopped and seeded
  • 1 cup plain yogurt
  • 1 tablespoon canola oil
  • 1 tablespoon fresh lemon juice
  • sea salt
  • pepper
  • 2 tomatoes
  • 1 head lettuce
  • 6 oz- 1lb crabmeat

Recipe

  • 1 blend and puree ingredients (except crabmeat, tomato, and lettuce) until smooth. adjust salt and pepper to taste.
  • 2 fold in crabmeat.
  • 3 slice tomato and head of lettuce into thick serving beds.
  • 4 arrange lettuce head slice. top with tomato. scoop crabmeat mixture atop. serve.

  • 3/4 cup butter flavor crisco
  • 3/4 cup splenda brown sugar blend
  • 2 tablespoons milk
  • 1 tablespoon vanilla
  • 1 egg

  • 3/4 teaspoon baking soda
  • 1 cup semi-sweet chocolate chips

Recipe

  • 1 preheat oven to 375°f place foil/parchment paper on cookie sheets and counter to save time.

Ingredients

  • 2 lbs stewing beef (i like chuck)
  • 2 onions, cut in chunks
  • 1 -2 tablespoon canola oil
  • 1 tablespoon kitchen bouquet
  • 2 garlic cloves, minced
  • 1 small head cabbage, cored and cut in chunks
  • 2 (14 1/2 ounce) cans diced tomatoes
  • 4 cups beef stock, heated to boiling
  • 1 -2 bay leaf
  • salt
  • 1 1/2 cups whole wheat flour
  • 1 1/2 cups flour
  • 4 teaspoons baking powder
  • 1 dash salt
  • 1/4 cup canola oil
  • 2 -3 teaspoons caraway seeds
  • 1 1/2 cups milk

Recipe

  • 1 in a large, wide pot, brown stew beef and onions in oil on medium-high heat.
  • 2 turn head down.add kitchen bouquet, garlic, and cabbage. cook, stirring, for 5-10 minutes.
  • 3 add tomatoes, beef stock, salt, and bay leaves. simmer 15-20 minutes, stirring occasionally.
  • 4 put flour into a mixing bowl. add baking powder and salt. mix well.
  • 5 add oil to flour mix and stir in well, crumbling through your hands if necessary to achieve a mealy texture.
  • 6 stir in the caraway seed.
  • 7 stir in the milk to make a soft dough.

  • 1 sift together flour, baking powder, salt and sugar substitute.
  • 2 add dates and walnuts.
  • 3 spread in well greased 8' square pan.

  • 1 teaspoon unflavored gelatin
  • 3 tablespoons cold water
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon vanilla
  • 1 cup whipping cream
  • 14 teaspoons artificial sweetener

Recipe

  • 1 in small saucepan, soften gelatin in water.
  • 2 stir over low heat til gelatin dissolves completely.
  • 3 in mixing bowl, beat cocoa, vanilla and cream til stiff peaks form.
  • 4 add artificial sweetener and liquid gelatin and beat til well blended.
  • 5 chill thoroughly before serving.

Great Vegetable Soup

Ingredients

  • 3 celery ribs
  • 2 cups chopped onions
  • 4 carrots, chopped
  • 3 medium potatoes, shredded
  • 2 cups fresh mixed vegetables or 2 cups frozen mixed vegetables, of your choice
  • 1 -2 tablespoon olive oil
  • sea salt
  • pepper
  • 8 cups water
  • 3 -4 bay leaves
  • 12 peppercorns
  • marrow, beef bone

Recipe

  • 1 simmer stock ingredients for an hour or two.
  • 2 heat oil in soup pot and saute onions and celery on med.
  • 3 high heat until onions are transluscent.
  • 4 add stock, carrots and potatoes.
  • 5 simmer until carrots are tender and potatoes start to break down (about 1/2 hour to an hour).
  • 6 add water to desired consistency.
  • 7 remove a few cups and puree with a blender and return to pot.
  • 8 salt and pepper to taste.
  • 9 add additional vegetables and simmer about 20 minutes until vegetables are tender.
  • 10 serve.

Chili-rubbed Chicken With Barbecue "mop" Sauce

Total Time: 50 mins Preparation Time: 10 mins Cook Time: 40 mins

Ingredients

  • Servings: 6
  • 3/4 cup chili powder
  • 3 tablespoons brown sugar
  • 2 teaspoons cayenne pepper
  • 1 cup hickory barbecue sauce
  • 3/4 cup ketchup
  • 1/3 cup orange juice
  • 1 tablespoon soy sauce
  • 1 teaspoon hot sauce (such as tabasco)
  • 2 whole chickens, quartered (backbones discarded - 3/12 pounds each)
  • 3 cups mesquite wood chips (soaked in cold water 1 hour) (optional)

Recipe

  • 1 for chili rub: mix all ingredients in bowl. for mop sauce: mix all sauce ingredients in medium bowl.
  • 2 arrange chicken in single layer on a large baking sheet. season with salt and pepper. sprinkle chili rub generously on both sides of chicken; press to adhere. let stand at room temperature 1 hour.
  • 3 prepare barbecue (medium-high heat). when coals are , drain chips if using, and scatter over coals. place chicken, skin side down, on grill back away from direct heat. cover grill and cook chicken until cooked through, turning every 5 minutes and covering grill, about 35 to 40 minutes (chili rub may look slightly burned). serve hot or warm, passing mop sauce separately.

Ingredients

  • Servings: 4
  • 2 cups milk
  • 1/4 cup long-grain rice (or brown)
  • 1/8 teaspoon salt
  • 1 unsweetened chocolate square
  • 1/2 teaspoon vanilla
  • 1 cup whipping cream
  • 8 teaspoons artificial sweetener
  • 1/4 cup nuts, chopped
  • 4 strawberries

Recipe

  • 1 in a heavy saucepan, heat milk, rice, salt and chocolate until mixture boils. stir occasionally. reduce heat. cover and simmer for about 40 minutes or until rice is tender and almost all the liquid has been absorbed.
  • 2 stir occasionally.
  • 3 remove from heat and stir in vanilla.
  • 4 refrigerate till chilled. stir several times.
  • 5 beat whipping cream til soft peaks form.
  • 6 beat in artificial sweetener.
  • 7 mix half of whipped cream with the chocolate mixture.
  • 8 pour into four dessert dishes.
  • 9 top with remaining whipped cream and nuts.
  • 10 garnish each with a strawberry.

Shrimp Kabob Salad

Ingredients

  • Servings: 4
  • 1 tablespoon orange zest
  • 1/2 cup orange juice
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon crused red pepper
  • 3 cloves garlic, minced
  • 16 uncooked large shrimp, peeled and deveined
  • 8 ounces jicama, peeled and cut into 1 inch pieces
  • 1 medium red bell pepper, cut into 1 inch pieces
  • 1 medium green bell pepper, cut into 1 inch pieces
  • 1 (8 ounce) can pineapple chunks in juice
  • 4 cups torn salad greens (i use spring mix because it is so colorful.)

Recipe

  • 1 in a large bowl, mix orange peel, orange juice, oil, salt, red pepper and garlic.
  • 2 measure out 1/3 cup of orange juice mixture and reserve; cover and refrigerate until needed.
  • 3 pour remaining marinade over vegetables and shrimp tossing to mix well.
  • 4 cover and refrigerate at least 2 hours.
  • 5 alternate the shrimp, vegetables and pineapple on eight 10-inch skewers.
  • 6 cook over medium hot coals or gas grill until shrimp is pink, approximately 10 to 15 minutes.

Ingredients

  • 4 slices bacon
  • 1 medium onion, diced
  • 1 yellow bell pepper, diced
  • 1 celery, diced
  • 4 cups frozen corn
  • 1 teaspoon sea salt
  • 1/2 teaspoon thyme
  • 1/4 teaspoon pepper
  • 3 medium yukon gold potatoes, chopped
  • 5 cups chicken stock
  • 1 cup half-and-half
  • 1 cup grated cheddar cheese

Recipe

  • 1 cook the bacon in a large stockpot, remove and sit aside.

  • 6 apples, pared and sliced
  • 1 (6 ounce) can frozen apple juice
  • 2 tablespoons cornstarch
  • 1/2 cup water
  • cinnamon
  • 2 tablespoons butter

Recipe

  • 1 fill pie shell with sliced apples.
  • 2 heat apple juice to boiling.
  • 3 dissolve cornstarch in water and stir into hot juice.
  • 4 cook until thickened.
  • 5 sprinkle cinnamon over apples.
  • 6 dot with butter.
  • 7 pour juice over all and cover with upper crust.
  • 8 prick crust.
  • 9 bake in 450 for 10 minutes.
  • 10 reduce heat to 350 and bake 35-45 minutes.

Diabetic Apple Oat Bran Muffins

Total Time: 38 mins Preparation Time: 20 mins Cook Time: 18 mins

Ingredients

  • Servings: 12
  • 3/4 cup all-purpose flour
  • 3/4 cup whole wheat flour
  • 1 1/2 teaspoons cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup low-fat buttermilk
  • 1/2 cup oat bran
  • 1/8 cup splenda brown sugar blend
  • 1 tablespoon vegetable oil
  • 1 tablespoon unsweetened applesauce
  • 1/4 cup egg
  • 1 1/2 cups apples (peeled, cored, and finely chopped golden delicious is a good choice)

Recipe

  • 1 heat oven to 400 degrees f.
  • 2 grease twelve 3-inch muffin cups or line with paper liners.
  • 3 in large bowl, combine both flours, cinnamon, baking powder, baking soda, and salt.
  • 4 in medium bowl, beat buttermilk, oat bran, brown sugar, oil, applesauce and egg until blended.
  • 5 stir buttermilk mixture into flour mixture just until combined.
  • 6 fold in apples.
  • 7 divide batter among muffin cups.
  • 8 bake 18 to 20 minutes or until wooden pick inserted in centers comes out clean.
  • 9 cool muffins in pan 5 minutes; remove from pan and cool on wire rack.

Ingredients

  • 6 cups apples, peeled and sliced
  • 1 cup xylitol sweetener
  • 2 tablespoons honey
  • 1/4 cup flax seed meal
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 teaspoon vanilla extract
  • 4 tablespoons butter, softened
  • 1 cup almond meal
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 egg

Recipe

  • 1 preheat oven to 350.
  • 2 the filling:.
  • 3 in a large bowl combine apples, 1/2 cup xylitol, 1 tbs honey, flaxseed meal, cinnamon, nutmeg, vanilla extract.
  • 4 stir gently with a toss like motion to mix up all ingredients and coat all the apple pieces.
  • 5 pour mixture into a greased baking dish.
  • 6 do not worry about spreading out, it will naturally.
  • 7 place 2 tbs butter on top the apple mixture.

  • 9 add all remaining ingredients to a mixing bowl and stir until smooth.
  • 10 drop batter by the spoonful over the filling, spreading as even as possible.
  • 11 the batter will spread during baking.
  • 12 bake for 1/2 hour at 350.

Onion Gravy

Ingredients

  • 2 tablespoons vegetable oil
  • 1 large onion, halved then sliced
  • 1 tablespoon plain flour
  • 12 fluid ounces chicken stock
  • 1 teaspoon dried mixed herbs
  • 1 teaspoon worcestershire sauce

Recipe

  • 1 heat the oil in a medium sized saucepan.
  • 2 add the onions and sauté until brown, about 10 minutes.
  • 3 sprinkle the flour over the onions and continue to cook, stirring, for 2-3 minutes.
  • 4 gradually add the stock, herbs and worcestershire sauce and continue to cook until thickened.
  • 5 partially cover and cook for a further 10-15 minutes to allow the flavours to develop, stirring from time to time.

  • 6 small gala apples
  • 1 (12 ounce) can diet strawberry soda (i use diet big red)
  • 1 cup fresh strawberries, sliced
  • 1 tablespoon splenda granular
  • 1 (8 ounce) container sugar-free cool whip

Recipe

  • 1 core the apples and place in a casserole dish.
  • 2 in a small bowl, combine the strawberries and splenda.
  • 3 stuff the middles of the apples with the berries.
  • 4 pour the soda over the apples.
  • 5 bake at 350 degrees until the apples are tender, anywhere from 30-45 minutes, depending on the apples.
  • 6 top with the cool whip.

  • 1 mix flour, cocoa powder, 1/4 cup splenda, baking powder and salt in a large bowl.
  • 2 mix the milk, egg, and butter in another large bowl.
  • 3 mix the wet ingredients into the dry ingredients.
  • 4 heat a pan over medium heat and melt butter in it.
  • 5 pour 1/4 cup of the mixture into the pan and cook until the surface starts to bubble and the bottom is golden brown, about 2-3 minutes.
  • 6 flip the pancake and cook the other side until the bottom is golden brown, about 1-2 minutes. repeat for the remaining batter.
  • 7 meanwhile simmer the cherries, remaining splenda (2 t), cornstarch and water over medium heat until the sauce thickens, about 5 minutes.

  • 1 in a covered saucepan, bring the black-eyed peas, garlic cloves, and 4 cups of the water to a boil.
  • 2 reduce the heat and simmer until tender, about 45 minutes.
  • 3 meanwhile, in a nonreactive soup pot, sauté the onions and celery in the 2 tablespoons water on medium heat for about 5 minutes, until the onions are translucent.

Peach Melba Jam

  • 12 ounces frozen unsweetened raspberries
  • 4 quarts water
  • 1/2 cup lemon juice
  • 3 lbs ripe peaches
  • 2 tablespoons lemon juice
  • 1 3/4 ounces pectin (low methoxyl pectin with calcium *)
  • 3/4 cup splenda sugar substitute

Recipe

  • 1 wash jars and lids in hot soapy water; rinse with warm water. fill boiling-water canner half full with water; add jars and water to cover. bring water to a boil, reduce heat and simmer. place lids in water to cover in a small saucepan; bring water to a simmer. simmer until ready to use. remove and drain jars and lids, one at a time, as needed for filling.
  • 2 place raspberries in food processor; process until smooth. press mixture through a fine sieve over a bowl, reserving pulp; discard seeds. measure exactly 3/4 cup pulp; set aside.
  • 3 combine 4 quarts water and 1/2 cup lemon juice in a large bowl; set aside. fill a dutch oven 3/4 full with water; bring to a boil. immerse peaches for 20 seconds or until skins easily peel away; remove with slotted spoon and plunge into ice water. slip skin off peaches using a paring knife. cut peaches in half; remove pits. place peach halves in the water and lemon juice solution to prevent browning; drain. cut peaches into chunks; place in food processor. process in batches until finely chopped. measure exactly 4 cups of fruit.
  • 4 combine peaches, raspberry pulp, 2 tablespoons lemon juice, and pectin in a large saucepan; stir to mix well. let stand for 10 minutes.
  • 5 bring mixture to a full rolling boil (a boil that doesn't stop bubbling when stirred) over medium-high heat. boil for 1 minute, stirring constantly. remove from heat; add splenda, stirring until it dissolves. skim off any foam with metal spoon.
  • 6 ladle hot jam immediately into prepared jars, filling to within 1/4-inch of tops. wipe jar rims and threads. cover with 2-piece lids. screw bands tightly. place jars on rack in canner. (water must cover jars by 1 to 2 inches. add boiling water, if necessary.) cover; bring water to gentle boil.
  • 7 process 10 minutes. remove jars and place upright on towel to cool completely. after jars cool, check seals by pressing center of lid with finger.   • 2 prepare vegetables: thinly slice green onion. drain and quarter artichoke hearts. chop cherry tomatos in half. thaw peas and green beans, i recommend cutting the green beans into approx 1" lengths. drain all the veggies as well as possible. squeeze the extra moisture out with a paper towel if you like.

  • 1 keeping chicken breasts partially frozen, cut them into thin slices.
  • 2 let thaw.
  • 3 sprinkle breast meat with salt and pepper.
  • 4 melt butter and oil in large frying pan over medium high heat.
  • 5 quickly cook chicken slices in batches, turning until lightly browned but not totally cooked through keeping them very tender.
  • 6 transfer to a platter and keep warm.
  • 7 pour out oil and wipe out pan and start again and continue to cook remaining chicken slices in this manner until all the chicken is browned.
  • 8 pour off and discard drippings, leaving any browned bits in bottom of pan.
  • 9 mix together garlic, onion, orange juice, orange peel and wine and add to the pan.
  • 10 bring to a boil, stirring; remove from heat.
  • 11 stir splenda, tarragon, curry, and soy flour into sour cream; then stir sour cream into wine mixture.
  • 12 return to heat and cook, stirring, until sauce comes to gentle boil.
  • 13 season to taste with salt and pepper and add back the cooked chicken tossing to cover with sauce and let simmer a couple minutes to just finish off the chicken and until the sauce has slightly thickened.
  • 14 if it becomes too thick, add a bit of chicken broth.
  • 15 garnish with orange wedges.
  • 16 you might squeeze the orange wedge's juice over all your serving, but be careful or the carbs will add up (about 3-5 carbs per wedge).

  • 3 mix remaining ingredients and either sprinkle over top or roll and put on as the top of the pie in thin sheets haphazard for a rustic look. you may need to add a bit more butter if you wish to roll it.
  • 4 bake at 375 fahrenheit for about 50 minutes or until bubbly.*.

  • 1 fill a large pot with water and bring to a boil on high heat.
  • 2 filling: remove and discard mushroom stems. wash mushrooms, dry well, add to the bowl of a food processor and chop finely. add the spinach to the processor bowl and process until fine. add the tofu pieces and process for a few more pulses. scrape the filling into a bowl and stir in the remaining ingredients and set aside.
  • 3 cabbage: cut off sixteen leaves of the cabbage and drop into the large pot of boiling water. blanch for one minute, then drain and blot on paper towels. trim off 2 inches of the thick part of the cabbage leaves. dice four of the pieces and add them to the filling. discard the rest and set the blanched leaves aside.
  • 4 chicken: lay the pieces of chicken in a flat dish. pour the mirin over them, season with salt and pepper, and let marinate for 15 minutes. remove the chicken and pour the mirin into the chicken stock. spread some of the filling over the chicken, one piece at a time, and roll up tightly, then roll again in one cabbage leaf. lay a second leaf over the top in the opposite direction to enclose the roll. repeat the process until there are eight rolls. tie them with string to prevent opening while cooking. carefully place the rolls into a 5-qt. dutch oven in one layer, placing them tightly against each other. add the chicken stock, bring to a simmer, and cook for 20 minutes.

  • 3 stir in the pesto and reheat to just barely boiling again.
  • 4 stir in parmesan and simmer a few moments until the sauce begins to thicken.
  • 5 remove from heat and serve over any pasta.
  • 6 note on pesto: best made with a pure basil pesto rather than a basil-and-spinach pesto. homemade or commercial is fine.
  • 7 note on parmesan: i freeze my homemade pesto without the cheese so i use the full 3/4 cup. if your pesto has a generous amount of cheese you will not need as much. not that plenty of parmesan is a bad thing. :d.
  • 8 if you toss this together with pasta, chunks of cooked chicken, and broccoli florets then spread it in a baking pan with plenty of shredded mozzarella on top you get a terrific casserole.
