French Meatball Soup

Ingredients

  • Servings: 1
  • 2 tablespoons rice
  • 2 ounces ground beef round
  • 1 tablespoon egg, raw beaten
  • 1 tablespoon onion, grated
  • 1 dash garlic
  • 1 dash parsley
  • 1 dash nutmeg
  • 2 tablespoons dry red wine
  • 1 1/4 cups beef broth
  • to taste salt and pepper

Recipe

  • 1 add rice to 1 cup water.
  • 2 boil 5 minutes; drain well.
  • 3 blend rice,
  • 4 ground round, egg, onion, garlic, parsley, and nutmeg; form into small meatballs.
  • 5 add wine to broth; bring to boil.
  • 6 drop meatballs into hot broth, one to at time. bring to boil again; reduce heat. simmer 20 minutes.
  • 7 add salt and pepper.
  • 8 microwave: add rice to 1 c. salted water.
  • 9 bring to a boil.
  • 10 hold 5 minutes; drain well.
  • 11 combine meatball ingredients as above. bring wine and broth to a boil.
  • 12 drop meatballs into hot broth, one at time. bring to a boil again.
  • 13 hold 10 minutes.
  • 14 add salt and pepper.
