Diabetic Blueberry Jam

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • 12 ounces unsweetened blueberries, thawed
  • 3/8 cup water
  • 2 tablespoons cornstarch
  • 8 teaspoons artificial sweetener

Recipe

  • 1 in a heavy saucepan bring blueberries and 1/4 cup water to a boil. cover.
  • 2 reduce heat and simmer til berries are soft.
  • 3 dissolve cornstarch in remaining water.
  • 4 add to blueberries and stir until jam thickens.
  • 5 remove from heat.
  • 6 cool slightly.
  • 7 add artificial sweetener.
  • 8 mix.
  • 9 serve warm or chilled.
