Diabetic Carrot Cake

Ingredients

- 4 eggs
- 2 tablespoons vanilla extract
- 1 1/2 cups cooking oil
- 3/4 cup frozen unsweetened apple juice (3/4 can concentrate-thawed)
- 3 teaspoons cinnamon
- 3 cups raw grated carrots
- 2 teaspoons baking soda
- 1 cup raisins
- 1 teaspoon salt
- 1 cup nuts, chopped
- 2 cups all-purpose flour
Recipe
- 1 beat eggs and add oil. sift together dry ingredients. add to egg & oil mixture. add vanilla & juice. stir in carrots, raisins & 1/2 cup nuts.
- 2 pour batter into greased cake pan and sprinkle 1/2 cup nuts on top.
- 3 bake in preheated oven for 325 degrees for 40 to 45 minutes.
