Diabetic Carrot Cake

Total Time: 55 mins Preparation Time: 15 mins Cook Time: 40 mins

Ingredients

  • Servings: 8
  • 4 eggs
  • 2 tablespoons vanilla extract
  • 1 1/2 cups cooking oil
  • 3/4 cup frozen unsweetened apple juice (3/4 can concentrate-thawed)
  • 3 teaspoons cinnamon
  • 3 cups raw grated carrots
  • 2 teaspoons baking soda
  • 1 cup raisins
  • 1 teaspoon salt
  • 1 cup nuts, chopped
  • 2 cups all-purpose flour

Recipe

  • 1 beat eggs and add oil. sift together dry ingredients. add to egg & oil mixture. add vanilla & juice. stir in carrots, raisins & 1/2 cup nuts.
  • 2 pour batter into greased cake pan and sprinkle 1/2 cup nuts on top.
  • 3 bake in preheated oven for 325 degrees for 40 to 45 minutes.
