Hungarian Beef Goulash

Ingredients
- Servings: 4
- 1 3/4 lbs beef, shank is best,cut into small pieces
- 2 -3 tablespoons oil
- 2 finely chopped onions
- 1 clove garlic, crushed
- 1 tomato, peeled
- 1 red peppers or 1 green pepper, sliced
- 1 tablespoon paprika
- 1 pinch caraway seed
- salt
Recipe
- 1 sauté the onions in heated oil.
- 2 sprinkle with caraway seeds and salt.
- 3 add the beef and brown well.
- 4 lower the heat and cover.
- 5 steam for a few minutes.
- 6 add the paprika and mix well.
- 7 add a little water and bring it to a boil.
- 8 lower the heat again.
- 9 when the meat is ¾ cooked, add the green pepper, garlic, and tomato.
- 10 simmer, at moderate heat, until the meat is tender.
- 11 if needed, add a little water from time to time.
- 12 serve with potato or pasta.
- 13 a cucumber salad is a nice accompaniment.
- 14 lamb or lamb can also be substituted for the beef.
