Creole Sauce (diabetic)

Total Time: 6 mins Preparation Time: 2 mins Cook Time: 4 mins

Ingredients

  • Servings: 8
  • 1/4 cup green pepper, minced
  • 2 tablespoons chopped onions
  • 2 tablespoons margarine (reduced calorie)
  • 1 1/2 cups canned tomatoes, chopped
  • 1/4 cup mushroom, sliced
  • 1/4 cup green olives, sliced
  • 1/4 teaspoon salt
  • pepper
  • 1 tablespoon dry sherry

Recipe

  • 1 combine green pepper, onion and margarine in a 3 qt microwave casserole or bowl.
  • 2 cover with lid or plastic wrap.
  • 3 on high, cook 1-1 1/2 minutes.
  • 4 add tomatoes, mushrooms and olives.
  • 5 cover and return to microwave.
  • 6 cook on high 2 1/2 minutes.
  • 7 stir in salt, pepper and sherry.
