Creole Sauce (diabetic)

Ingredients

- 1/4 cup green pepper, minced
- 2 tablespoons chopped onions
- 2 tablespoons margarine (reduced calorie)
- 1 1/2 cups canned tomatoes, chopped
- 1/4 cup mushroom, sliced
- 1/4 cup green olives, sliced
- 1/4 teaspoon salt
- pepper
- 1 tablespoon dry sherry
Recipe
- 1 combine green pepper, onion and margarine in a 3 qt microwave casserole or bowl.
- 2 cover with lid or plastic wrap.
- 3 on high, cook 1-1 1/2 minutes.
- 4 add tomatoes, mushrooms and olives.
- 5 cover and return to microwave.
- 6 cook on high 2 1/2 minutes.
- 7 stir in salt, pepper and sherry.
