Gluten Free/sugar Free Strawberry Shortcake

Total Time: 21 mins Preparation Time: 6 mins Cook Time: 15 mins

Ingredients

  • 1/2 cup butter
  • 1/2 cup splenda sugar substitute
  • 1/2 cup stevia, in the raw
  • 3 eggs
  • 1 egg
  • 1 1/2 teaspoons vanilla
  • 1/2 cup cornstarch
  • 1/2 cup potato starch
  • 1 1/4 teaspoons baking powder

Recipe

  • 1 preheat oven to 375`f. grease a 12 muffin pan.
  • 2 in a large bowl cream butter and splenda and stevia using mixer.
  • 3 add the eggs, egg and vanilla. beat until slightly thickened.
  • 4 add baking powder, cornstarch and baking powder slowly while mixing.
  • 5 mix until well blended.
  • 6 fill the bake for 15 minutes. (test with a toothpick).
  • 7 remove from the pan while still warm.
  • 8 serve topped with strawberries and whipped cream.
