Raw Apple Relish

Ingredients

  • Servings: 6
  • 2 large red apples
  • 1 lemon, juice of
  • 1 medium onion, chopped
  • 1/4 cup sliced sweet gherkin
  • 1 tablespoon capers
  • 1/4 cup sliced ripe olives
  • 1/2 cup low-fat french dressing

Recipe

  • 1 core apples; do not peel.
  • 2 cut crosswise into 1/2" slices, then into 1/2" chunks.
  • 3 sprinkle with lemon juice.
  • 4 add remaining ingredients; toss to mix well.
  • 5 great with roast lamb, lamb chops, baked ham or ham slices, or smoked lamb butt.
