Garlic Sweet Potato Mash

Ingredients

• Servings: 4
• 4 large sweet potatoes, peeled &,cubed (2 pounds)
• 3 tablespoons unsalted butter
• 3 cloves garlic, crushed
• fresh ground pepper
• salt (optional)

Recipe

• 1 in a large pan boil sweet potatoes until tender, drain.
• 2 meanwhile in the same pan add butter and saute garlic until lightly browned.
• 3 return potatoes to pan and mash until smooth and creamy.
• 4 add pepper (and salt if you want) and serve immediately.
