Chris Young's Tofu Dinner Salad

Total Time: 25 mins Preparation Time: 15 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 8 ounces soyboy tofu, sliced into 1/2-inch bricks (caribbean or tofu lin)
  • 4 -6 cups baby greens
  • 1 avocado, chopped
  • 1/4 cup cucumber, sliced
  • 2 carrots, grated
  • 1 tomato, chopped
  • 1 apple, chopped (optional)
  • 1/2 cup olive oil
  • 3 tablespoons balsamic vinegar
  • 1 teaspoon mustard powder
  • 1 teaspoon honey

Recipe

  • 1 pan-fry the tofu in olive oil until barely brown on the edges.
  • 2 drain on paper towel and let cool.
  • 3 whisk together dressing ingredients in a small bowl.
  • 4 mix all of the salad ingredients together in a large bowl and top with the dressing.
