Chris Young's Tofu Dinner Salad

Ingredients
- Servings: 4
- 8 ounces soyboy tofu, sliced into 1/2-inch bricks (caribbean or tofu lin)
- 4 -6 cups baby greens
- 1 avocado, chopped
- 1/4 cup cucumber, sliced
- 2 carrots, grated
- 1 tomato, chopped
- 1 apple, chopped (optional)
- 1/2 cup olive oil
- 3 tablespoons balsamic vinegar
- 1 teaspoon mustard powder
- 1 teaspoon honey
Recipe
- 1 pan-fry the tofu in olive oil until barely brown on the edges.
- 2 drain on paper towel and let cool.
- 3 whisk together dressing ingredients in a small bowl.
- 4 mix all of the salad ingredients together in a large bowl and top with the dressing.
