Passover/ Low Carb Chocolate Cake

Total Time: 1 hr Preparation Time: 30 mins Cook Time: 30 mins

Ingredients

  • Servings: 8
  • 2 cups pecans
  • 1/3 cup cocoa
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 4 eggs
  • 1/4 cup butter or 1/4 cup margarine
  • 1 teaspoon vanilla
  • 1 cup sugar (or sugar substitute)
  • 1/2 cup water
  • 1/4 cup erythritol (optional)

Recipe

  • 1 heat oven to 350. grease an 8 inch round or springform pan.
  • 2 process pecans until they are the texture of meal.
  • 3 process the rest of the dry ingredients.
  • 4 add the wet ingredients and process until blended.
  • 5 pour into the pan and bake.
  • 6 bake for about 25 minutes (check with toothpick and leave in longer if needed).
  • 7 cool and slice.
