Mihc's Indian Lentil & Vegetable Soup

Ingredients

  • 1 cup brown lentils
  • 5 cups water
  • 1 teaspoon minced garlic
  • 1 tablespoon extra virgin olive oil
  • 1 cup minced onion
  • 1/2 cup thinly sliced celery
  • 1 cup thinly sliced baby carrots
  • 1/2 cup red potatoes, thinly sliced
  • 1 1/2 tablespoons tomato paste
  • 1 bay leaf
  • 1 teaspoon chili powder
  • 1 1/2 teaspoons salt
  • 1 1/2 cups chopped tomatoes, can
  • 1 teaspoon dried parsley
  • 1/8 cup chopped fresh cilantro

Recipe

  • 1 bring lentils, water, garlic, olive oil, onion, celery and carrots to a boil in a medium saucepan. simmer on low, uncovered for 1 hour. add rest of ingredients, stir, and bring to boil. simmer on low for 20 minutes.
