Mihc's Indian Lentil & Vegetable Soup

Ingredients
- 1 cup brown lentils
- 5 cups water
- 1 teaspoon minced garlic
- 1 tablespoon extra virgin olive oil
- 1 cup minced onion
- 1/2 cup thinly sliced celery
- 1 cup thinly sliced baby carrots
- 1/2 cup red potatoes, thinly sliced
- 1 1/2 tablespoons tomato paste
- 1 bay leaf
- 1 teaspoon chili powder
- 1 1/2 teaspoons salt
- 1 1/2 cups chopped tomatoes, can
- 1 teaspoon dried parsley
- 1/8 cup chopped fresh cilantro
Recipe
- 1 bring lentils, water, garlic, olive oil, onion, celery and carrots to a boil in a medium saucepan. simmer on low, uncovered for 1 hour. add rest of ingredients, stir, and bring to boil. simmer on low for 20 minutes.
