Refreshing Low Calorie Salad

Total Time: 5 mins Preparation Time: 5 mins

Ingredients

  • 2 medium sized cucumbers
  • 2 medium sized tomatoes
  • 1 -2 tablespoon cottage cheese (low-fat or non-fat)
  • 2 -3 walnuts, chopped (coarsely or finely chopped)
  • 2 teaspoons dried mint
  • 1 teaspoon dry basil or 3 fresh basil leaves, finely chopped

Recipe

  • 1 cut the tomatoes and cucumbers into "cubes" not too small and not too big (or to the liking, i prefer them to be a bit smaller).
  • 2 mix the diced vegetables, the cheese, the chopped walnuts and the herbs all together in a bowl.
  • 3 enjoy!
