Super Moist Corny Muffins

Total Time: 45 mins Preparation Time: 10 mins Cook Time: 35 mins

Ingredients

  • 18 ounces cornbread, muffin mix
  • 3 eggs
  • 1 cup milk
  • 1 cup cottage cheese (small curd)
  • 3/4 cup butter (melted)
  • 1 (12 ounce) can mexican-style corn
  • 1 medium onion (minced)
  • 1 tablespoon sugar

Recipe

  • 1 i put all ingredients in a large mixing bowl, mix with blender on low until all dry mix no longer shows. spray cupcake pans with butter flavored ( i used walmart brand) non stick spray and place one heaping tablespoon of mixture in each well. place pans in preheated oven at 375 degrees. 35-40 minute check with tooth pick in center after 30 minutes.
