Super Moist Corny Muffins

Ingredients
- 18 ounces cornbread, muffin mix
- 3 eggs
- 1 cup milk
- 1 cup cottage cheese (small curd)
- 3/4 cup butter (melted)
- 1 (12 ounce) can mexican-style corn
- 1 medium onion (minced)
- 1 tablespoon sugar
Recipe
- 1 i put all ingredients in a large mixing bowl, mix with blender on low until all dry mix no longer shows. spray cupcake pans with butter flavored ( i used walmart brand) non stick spray and place one heaping tablespoon of mixture in each well. place pans in preheated oven at 375 degrees. 35-40 minute check with tooth pick in center after 30 minutes.
