Carrots Provencal

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 5 medium carrots, peeled and cut into sticks (about 1 lb)
  • 1/4 cup water
  • 1 tablespoon olive oil
  • 3 garlic cloves, minced (about 1 tbsp)
  • 1/4 cup fresh parsley, chopped
  • 1 tablespoon fresh basil or 1 tablespoon fresh tarragon or 1 tablespoon fresh dill, chopped
  • 1/4 teaspoon salt and pepper

Recipe

  • 1 combine carrots, water, oil and half of garlic in heavy saucepan.
  • 2 cover and simmer over medium-low heat for 14 minutes or until carrots are tender-crisp.
  • 3 stir in parsley, basil, remaining garlic, salt & pepper.
  • 4 cover and cook 5 minutes or until carrots are tender.
