French Sponge Cookies

Total Time: 25 mins Preparation Time: 15 mins Cook Time: 10 mins

Ingredients

  • 1/2 cup sifted cake flour
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3 large eggs, separated
  • 1/2 teaspoon almond extract
  • 1/4 teaspoon vanilla extract
  • 6 tablespoons sugar

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 lightly coat 2 cookie sheets with vegetable cooking spray.
  • 3 sift flour, baking powder and salt together.
  • 4 beat egg yolks with extracts in a mixer bowl until pale and thick.
  • 5 in a clean mixer bowl, with clean beaters, beat egg whites to soft peaks.
  • 6 beat in sugar 1 t. at a time, until stiff and glossy.
  • 7 gently fold egg yolks into egg whites.
  • 8 fold in dry ingredients until just blended.
  • 9 drop by level tablespoonfuls 2 inches apart onto prepared cookie sheets.
  • 10 bake 10 minutes or until golden.
  • 11 carefully transfer to wire racks to cool completely.
