Gingered Asparagus

Total Time: 10 mins Preparation Time: 5 mins Cook Time: 5 mins

Ingredients

  • Servings: 4
  • 1 lb fresh asparagus
  • cooking spray
  • 2 tablespoons low sodium soy sauce
  • 2 teaspoons sesame seeds, toasted
  • 1 teaspoon fresh ginger, minced
  • 1 dash pepper
  • 1/2 teaspoon orange rind, grated

Recipe

  • 1 snap off tough ends of asparagus.
  • 2 remove scales from stalks with a knife or vegetable peeler, if desired.
  • 3 cut spears into 2-inch pieces.
  • 4 coat a large non-stick skillet with cooking spray.
  • 5 place over medium-low heat until hot.
  • 6 add asparagus, soy sauce, sesame seeds, ginger, and pepper.
  • 7 saute 5 minutes or until asparagus is crisp-tender.
  • 8 to serve, transfer to a serving bowl, and sprinkle with orange rind.
