Gingered Asparagus

Ingredients

- 1 lb fresh asparagus
- cooking spray
- 2 tablespoons low sodium soy sauce
- 2 teaspoons sesame seeds, toasted
- 1 teaspoon fresh ginger, minced
- 1 dash pepper
- 1/2 teaspoon orange rind, grated
Recipe
- 1 snap off tough ends of asparagus.
- 2 remove scales from stalks with a knife or vegetable peeler, if desired.
- 3 cut spears into 2-inch pieces.
- 4 coat a large non-stick skillet with cooking spray.
- 5 place over medium-low heat until hot.
- 6 add asparagus, soy sauce, sesame seeds, ginger, and pepper.
- 7 saute 5 minutes or until asparagus is crisp-tender.
- 8 to serve, transfer to a serving bowl, and sprinkle with orange rind.
