Hominy Con Chile (mexican

Ingredients

  • Servings: 8
  • 2 (15 ounce) cans hominy
  • 7 ounces green chilies, diced
  • 10 1/2 ounces cream of mushroom soup, low fat
  • 1 cup sour cream, fat free
  • 1/8 teaspoon cumin
  • 1/4 teaspoon pepper
  • 1 tablespoon cilantro, dried
  • 1 cup cheddar cheese, low fat, shredded

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 pour hominy into a colander, rinsewell with water and allow to drain.
  • 3 in a large bowl, combine hominy, chiles, soup sour cream, seasonings and 1/2 cup cheese.
  • 4 mix well and pour into a nonstick baking dish.
  • 5 sprinkle with remaining cheese on top.
  • 6 bake 45 minutes.
