Raisin Pecan Pie (diabetic)

Ingredients

- 1 unbaked pie shell (9 inch)
- 1 1/2 cups evaporated skim milk
- 1/4 cup sugar substitute
- 1 tablespoon butter
- 4 eggs
- 2 teaspoons cornstarch
- 1/4 teaspoon salt
- 1 cup pecans, chopped
- 1 teaspoon vanilla
- 1/3 cup raisins
Recipe
- 1 prepare but do not bake pie shell.
- 2 combine milk, sugar replacement, butter, eggs, cornstarch and salt in heavy saucepan.
- 3 cook and stir over medium-low heat til well blended and slightly thickened.
- 4 remove from heat.
- 5 stir in pecans and vanilla, and allow filling to rest 10 minutes.
- 6 sprinkle raisins on bottom of unbaked pie shell and pour pecan mixture on top.
- 7 bake 375f 45-50 mins or til knife inserted in centre comes out clean.
