Raisin Pecan Pie (diabetic)

Total Time: 1 hr 10 mins Preparation Time: 20 mins Cook Time: 50 mins

Ingredients

  • Servings: 8
  • 1 unbaked pie shell (9 inch)
  • 1 1/2 cups evaporated skim milk
  • 1/4 cup sugar substitute
  • 1 tablespoon butter
  • 4 eggs
  • 2 teaspoons cornstarch
  • 1/4 teaspoon salt
  • 1 cup pecans, chopped
  • 1 teaspoon vanilla
  • 1/3 cup raisins

Recipe

  • 1 prepare but do not bake pie shell.
  • 2 combine milk, sugar replacement, butter, eggs, cornstarch and salt in heavy saucepan.
  • 3 cook and stir over medium-low heat til well blended and slightly thickened.
  • 4 remove from heat.
  • 5 stir in pecans and vanilla, and allow filling to rest 10 minutes.
  • 6 sprinkle raisins on bottom of unbaked pie shell and pour pecan mixture on top.
  • 7 bake 375f 45-50 mins or til knife inserted in centre comes out clean.
