Reduced-fat Impossibly Easy Vegetable Pie

Ingredients
- 3 cups chopped broccoli
- 1/2 cup chopped onion
- 1/3 cup chopped green bell pepper
- 1/3 cup chopped red pepper
- 1 cup shredded fat-free cheddar cheese
- 1/2 cup self-rising flour
- 1 cup skim milk
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 eggs
Recipe
- 1 heat oven to 400ºf. spray a 9-inch pie plate with cooking spray.
- 2 microwave broccoli in a covered dish for 2-3 minutes, or until almost tender. stir together cooked broccoli, onion, bell pepper and cheese in a medium bowl and transfer mixture to pie plate in an even layer.
- 3 stir remaining ingredients until blended. pour over vegetable mixture in pie plate.
- 4 bake 35 to 45 minutes or until golden brown and knife inserted in center comes out clean. cool 5 minutes.
