Reduced-fat Impossibly Easy Vegetable Pie

Total Time: 55 mins Preparation Time: 10 mins Cook Time: 45 mins

Ingredients

  • 3 cups chopped broccoli
  • 1/2 cup chopped onion
  • 1/3 cup chopped green bell pepper
  • 1/3 cup chopped red pepper
  • 1 cup shredded fat-free cheddar cheese
  • 1/2 cup self-rising flour
  • 1 cup skim milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 eggs

Recipe

  • 1 heat oven to 400ºf. spray a 9-inch pie plate with cooking spray.
  • 2 microwave broccoli in a covered dish for 2-3 minutes, or until almost tender. stir together cooked broccoli, onion, bell pepper and cheese in a medium bowl and transfer mixture to pie plate in an even layer.
  • 3 stir remaining ingredients until blended. pour over vegetable mixture in pie plate.
  • 4 bake 35 to 45 minutes or until golden brown and knife inserted in center comes out clean. cool 5 minutes.
