Salad And Hummus Sandwich

Ingredients

  • Servings: 1
  • 1 flaxseed lavash wrap
  • 2 tablespoons hummus
  • 1/4 cup fresh spinach leaves
  • 2 large romaine leaves
  • 4 asparagus, steamed
  • 1/4 cucumber, peeled, seeded, and sliced
  • 1/4 red pepper, seeded and sliced
  • 1 carrot, peeled and julienned
  • 2 tablespoons feta
  • 1/2 teaspoon olive oil
  • 1 teaspoon lemon juice
  • kosher salt & freshly ground black pepper

Recipe

  • 1 lay the wrap onto a sheet of plastic wrap.
  • 2 spread the hummus all over.
  • 3 down the middle of the wrap lay the lettuce, spinach, asparagus, cucumber, red pepper, and carrot.
  • 4 sprinkle the feta, olive oil, lemon juice, salt and pepper over all then roll up.
  • 5 roll to secure in the plastic wrap and refrigerate until ready to eat.
