Scottish Cheddar Cheese Soup

Total Time: 29 mins Preparation Time: 4 mins Cook Time: 25 mins

Ingredients

  • 2 onions, thinly sliced
  • 2 ounces butter
  • 2 ounces flour
  • 2 1/2 cups stock
  • 2 1/2 cups milk
  • 1 pinch pepper
  • 6 ounces cheddar cheese, shredded

Recipe

  • 1 melt the butter in a saucepan and cook the onions for a few minutes.
  • 2 add the flour and cook for another minute.
  • 3 stir in the milk and stock, bring to the boil, season with pepper and simmer gently for about 5 minutes.
  • 4 toss the grated cheese gently into the soup and simmer until melted.
  • 5 do not allow to boil.
