Floridanative's Cajun Black Beans And Rice

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • 3/4 lb grass-fed ground beef
  • 1 large onion, fine dice
  • 1 medium green bell pepper, fine dice
  • 2 -3 stalks celery, fine dice
  • 1 cup chicken broth (or vegetable broth, as desired)
  • 2 (15 ounce) cans organic black beans, rinsed and drained
  • 2 cups prepared brown basmati rice
  • 1 -2 tablespoon cajun seasoning (i use kittencal's recipe the best creole/cajun seasoning mix)
  • sea salt
  • black pepper

Recipe

  • 1 brown ground beef until no longer pink.
  • 2 on medium heat, add onions, peppers and celery to beef, and cook until onion is soft and translucent.
  • 3 add chicken broth, black beans and rice.
  • 4 stir to mix well and add the cajun seasoning, and salt and pepper to taste.
  • 5 simmer on low about 15 minutes or until most of the liquid is absorbed or cooked off.
  • 6 serve with a green salad.
