Long-cooked Broccoli

Total Time: 1 hr 19 mins Preparation Time: 15 mins Cook Time: 1 hr 4 mins

Ingredients

  • 1 1/2 lbs broccoli
  • 6 tablespoons olive oil
  • 6 garlic cloves, sliced
  • 1 pinch dried red pepper flakes
  • salt
  • 1 cup water
  • 1 lemon, juiced

Recipe

  • 1 cut the florets off of the broccoli and chop into fairly small pieces.
  • 2 peel the stem and remove the hard, dry end. cut the stem into thin slices.
  • 3 heat oil in a heavy-bottomed pot over medium heat.
  • 4 add broccoli, garlic, chile flakes, and salt.
  • 5 cook for a few minutes.
  • 6 add water and bring to a boil.
  • 7 reduce to a simmer. cover and cook for about 1 hour, until very tender.
  • 8 stir briskly, causing the broccoli to break apart.
  • 9 add the lemon juice (and more salt or oil if necessary).
