Hummus Wrap With Tomatoes And Spinach

Ingredients
- Servings: 2
- 2 flour tortillas (i like the 8 inch size)
- 1/4 cup hummus (i suggest hummus from dried chickpeas)
- 1/4 cup chopped tomato
- 1/4 cup fresh spinach, shredded
- olive oil
- 1 teaspoon minced sweet onion (optional)
Recipe
- 1 spread half the hummus on each wrap.
- 2 top each wrap with half the tomato and half the spinach.
- 3 drizzle with olive oil.
- 4 add onion if desired and fold wrap to enclose the veggies.
- 5 note -- pita pockets are out of fashion but they still taste as good as they did when they were trendy -- especially with this combination of flavors inside -- so that variation is worth trying.
