Monkfish With Lemon

Total Time: 25 mins Preparation Time: 15 mins Cook Time: 10 mins

Ingredients

  • Servings: 2
  • 1 lb monk fish
  • 4 tablespoons butter
  • 1 lemon, juice of
  • 3/4 cup flour
  • salt and pepper
  • 1/2 cup wine (optional)
  • 1 tablespoon fresh parsley, chopped
  • 3 tablespoons butter

Recipe

  • 1 cut monkfish into 8 pieces.
  • 2 dredge in flour seasoned with salt and pepper.
  • 3 heat skillet over medium heat; add 4 tablespoons butter.
  • 4 sauté fish in melted 1 minute on each side, till nicely browned.
  • 5 remove from skillet.
  • 6 add wine, lemon and parsley to skillet and reduce by half.
  • 7 add 3 tablespoons butter to lemon mixture, shake skillet.
  • 8 serve over fish.
