Ingredients

- 2 (12 ounce) cans tuna fish (thoroughly drained)
- 1 carrot (chopped)
- 3 shallots (peeled and chopped)
- 1 lemon, rind of (grated)
- 1/2 lemon, juice of
- 1 small jalapeno pepper (seeded and finely chopped)
- 3 stalks celery (chopped)
- 1 roma tomato (chopped)
- 1 pinch fresh coarse ground black pepper
- 1 small green bell pepper (chopped)
- 4 tablespoons canola oil mayonnaise (high oleic if possible)
- 3 tablespoons sweet pickle relish
- 6 large romaine lettuce leaves (cut in half)
- 12 slices whole wheat bread (toasted whole grain)
Recipe
- 1 combine everything in a large bowl except for the lettuce and bread. put lettuce and tuna salad on toasted bread, and enjoy.
