Kale Salad

Ingredients

  • Servings: 6
  • 2 bunches kale
  • 1 large red onion, thin slice
  • 3 garlic cloves, pressed
  • 8 brown button mushrooms, tops only sliced (can use button)
  • 8 cherry tomatoes, cut in half
  • 1 small tart apple, cut into matchsticks
  • 1/2 cup extra virgin olive oil
  • 2 tablespoons dijon mustard
  • 1/4 teaspoon kosher salt (optional)
  • 3 limes
  • fresh ground pepper (optional)

Recipe

  • 1 to make:.
  • 2 wash kale well and dry between towels. remove tough stems.
  • 3 slice or tear apart and place in salad bowl.
  • 4 in small bowl, whisk together, garlic, mustard, salt, pepper, and olive oil. add the juice of one lime to this and whisk to make dressing.
  • 5 place onions, mushrooms and apple with kale greens.
  • 6 pour dressing over and toss.
  • 7 refrigerate until ready to serve.
  • 8 to serve:.
  • 9 add sliced tomatoes just before serving.
  • 10 squeeze two limes over salad and toss.
  • 11 now -- enjoy!
