Kale Salad

Ingredients

- 2 bunches kale
- 1 large red onion, thin slice
- 3 garlic cloves, pressed
- 8 brown button mushrooms, tops only sliced (can use button)
- 8 cherry tomatoes, cut in half
- 1 small tart apple, cut into matchsticks
- 1/2 cup extra virgin olive oil
- 2 tablespoons dijon mustard
- 1/4 teaspoon kosher salt (optional)
- 3 limes
- fresh ground pepper (optional)
Recipe
- 1 to make:.
- 2 wash kale well and dry between towels. remove tough stems.
- 3 slice or tear apart and place in salad bowl.
- 4 in small bowl, whisk together, garlic, mustard, salt, pepper, and olive oil. add the juice of one lime to this and whisk to make dressing.
- 5 place onions, mushrooms and apple with kale greens.
- 6 pour dressing over and toss.
- 7 refrigerate until ready to serve.
- 8 to serve:.
- 9 add sliced tomatoes just before serving.
- 10 squeeze two limes over salad and toss.
- 11 now -- enjoy!
