Citrus-ginger Ice (granita)

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 6
  • 3 1/2 cups water
  • 1 1/2 cups splenda granular or 1 1/2 cups sugar
  • 1/8 cup gingerroot, peeled and minced
  • 2 teaspoons orange rind, grated
  • 1/3 cup orange juice
  • 2 tablespoons lemon juice

Recipe

  • 1 combine water, splenda/sugar, gingerroot, and orange rind in medium sucepan. heat to boiling over medium-high heat, stirring until sugar is dissolved. reduce heat and simmer 7 to 10 minutes.
  • 2 cool to room temperature.
  • 3 strain through sieve to remove ginger pieces. stir in orange juice and lemon juice.
  • 4 pour into a large freezer proof container, and put into the freezer.
  • 5 every 15 minutes, for 2 hours, take out of the freezer and mix it up.
  • 6 then scrape with fork 30 minutes during the third hour until the granita appears grainy and the crystals have been broken down. it should resemble snow or coarse sand.
  • 7 enjoy!
