Herb-roasted Root Vegetables

Ingredients
- 2 medium turnips
- 2 medium parsnips
- 1 medium red onion
- 1 cup baby carrots
- cooking spray
- 2 teaspoons italian seasoning
- 1/2 teaspoon coarse salt
Recipe
- 1 peel and cut turnips into 1 inch pieces.
- 2 peel and cut parsnips into 1/2 inch pieces.
- 3 cut onion into 1 inch wedges.
- 4 preheat oven to 425.
- 5 spray 15x10x1 pan with cooking spray.
- 6 arrnage vegetables in single layer
- 7 spray with cooking spray.
- 8 sprinkle italain seasoning and coarse salt.
- 9 bake uncovered for 45 to 55 minutes stirring once-until vegetables are tender.
