Herb-roasted Root Vegetables

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • 2 medium turnips
  • 2 medium parsnips
  • 1 medium red onion
  • 1 cup baby carrots
  • cooking spray
  • 2 teaspoons italian seasoning
  • 1/2 teaspoon coarse salt

Recipe

  • 1 peel and cut turnips into 1 inch pieces.
  • 2 peel and cut parsnips into 1/2 inch pieces.
  • 3 cut onion into 1 inch wedges.
  • 4 preheat oven to 425.
  • 5 spray 15x10x1 pan with cooking spray.
  • 6 arrnage vegetables in single layer
  • 7 spray with cooking spray.
  • 8 sprinkle italain seasoning and coarse salt.
  • 9 bake uncovered for 45 to 55 minutes stirring once-until vegetables are tender.
