Healthy Granola Bars

Ingredients
- 1 1/2 cups steel cut oats
- 3 egg whites
- 1 egg
- 1 1/2 teaspoons vanilla extract
- 1 tablespoon vegetable oil
- 1 teaspoon vegetable oil
- 1 1/2 teaspoons ground cinnamon
- 3/4 cup dark brown sugar
- 1/4 teaspoon salt
- 2/3 cup dried fruit
- 1/4 cup nuts
- 1/4 cup 100% bran
Recipe
- 1 toast oats on a dry sheet pan at 400 degrees for 10min or until slightly brown and toasted.
- 2 whisk together eggs, egg whites, vanilla, oil, cinnamon, sugar and salt in a bowl.
- 3 add in oats, fruit, nuts and bran.
- 4 spread in a 8 by 11 pan that is lined with foil and sprayed with cooking spray.
- 5 cook at 325 degrees for 35 to 40 minutes. let cool, cut and enjoy!
- 6 if you use a bigger pan like a 9 by 13 your bars will be thiner and cook in approx 25min. or use a smaller pan for thicker bars and cook an extra 5-10min.
